12 Bakes of Christmas – Cocoa Cookies


Want another dose of chocolate in this festive time? Try this very easy and quick recipe, with minimal ingredients, for extremely satisfying cocoa cookies!

Makes 24 cookies


  • 220g unsalted butter, at room temperature
  • 100g castor sugar
  • 220g self-raising flour
  • 4 tbsp cocoa powder (NOT drinking chcolate)

1. Preheat oven to 190 degrees C. Line baking tray with parchment paper.

2. Beat together softened room temperature butter and castor sugar until pale, light and fluffy.

3. Mix and sift dry ingredients together and mix well into butter mixture using a wooden spoon.

4. Use floured hands, roll balls of dough and place them onto the lined baking tray. Make sure to leave enough space in between dough balls to allow spreading in oven. Useful tip: You may want to weigh the dough (this depends on how many cookies you want to make) and divide it uniformly for an even bake.

5. Sightly flatten dough balls with the palm of your hand.

6. Bake for 8 minutes.

7. Leave cookies in baking tray for 5 minutes before transferring them to a wire rack to finish cooling. Useful tip: if you don’t have a wire rack, make use of the rack in the oven. Allow the cookies to cool in the tray for a small period of time to allow them to crisp up nicely without breaking when you move them later.

If you want to make the cookies a little fancier, try dusting a bit of icing sugar on top for a snowy effect!

Given how few ingredients this recipe calls for, if you have dietary requirements, it would still be very easy to find a substitution! Definitely a quick and easy treat in between festive errands!
