12 Bakes of Christmas – Chai Spice Cupcakes


Can’t get enough of your chai tea latte? Why not have it with a chai spice cupcake for a doubly warm and tasty treat!

Makes 12 regular cupcakes


  • Chai spice mix (1/2 tsp ground cinnamon, 1/2 tsp ground ginger, 1/2 tsp ground cloves, 3/4 tsp ground cardamon)
  • 110g unsalted butter, at room temperature
  • 200g castor sugar
  • 1 egg, 2 eggs whites (if it is confusing, it is 3 eggs whites and 1 egg yolk in total)
  • 1tsp vanilla extract
  • 210g plain flour
  • 1 1/4tsp baking powder
  • 175ml milk

1. Preheat oven to 175 degrees C. Line 12 hole cupcake tin with cupcake liners.

2. Beat together softened room temperature butter, castor sugar until pale, light and fluffy.

3. Add egg and egg whites one at time, beat well after each addition.

4. Add vanilla extract. Beat well.

5. In a small bowl, mix together Chai spice mix. Tip: Have fun adjusting and experimenting the ratio of spices to your own liking!

6. Mix and sift flour and baking powder together, mix with Chai spice.

7. Alternate dry ingredients and milk into butter mixture in three additions with a wooden spoon, beginning and ending with flour, mix until just combined after each addition. (Half of dry ingredients, then milk, finishing with remaining half of dry ingredients.)

8. Fill cupcake liners to 3/4 full with cupcake batter.

9. Bake for 18 minutes.

10. Leave cupcakes in tin for 10 minutes before transferring them to a wire rack to finish

Indulge yourself with these tasty fragrant fairy cakes! Feel free to make them as mini cupcakes as well, just shorten the cooking time by 5 minutes and keep an eye on them.
