12 Bakes of Christmas – Dutch Spiced Apple Cake

Winter time calls for indulgent food, and this Dutch recipe gets it just right with sugar, spice, and everything nice! Modify the festive recipe by using nutmeg instead of cinnamon or adding in sultanas…the options are endless. This cake can also be frozen so make a batch and save some for a later date – promise you’ll be wanting more! 

 

Cake:

  • 170g self-raising flour
  • 90g caster sugar
  • 1 teaspoon baking powder
  • 1 large egg
  • 6 tablespoons milk
  • 30g melted butter/margarine

 Topping:

  • 450g cooking apples: peeled, cored and sliced
  • 30g melted butter/margarine
  • 90g caster sugar
  • 2 teaspoons ground cinnamon (more to taste)

Method:

  1. Put sieved flour, baking powder and sugar into a bowl.
  2. Make dip in the centre.
  3. Mix beaten egg, milk, melted butter and pour into the dip.
  4. Mix with a wooden spoon until all combined.
  5. Butter base and sides of a tin (about 11” by 7”).
  6. Pour cake mixture into the tin and spread evenly.
  7. Arranged sliced apples in rows over the cake mixture.
  8. Brush the top with extra melted butter.
  9. Mix sugar and cinnamon for topping and sprinkle over apples.
  10. Bake at 200°C for 35 minutes (until cake is cooked and apples lightly browned).
  11. Eat hot or when cooled, sprinkled with icing sugar and accompanied by cream, ice-cream, or the wintry favourite that is custard.
